GREEK CHICKEN SKEWER with chop salad and tzatziki



Time: 25 minutes

Equipment required: Small pot, knife, cutting board, and one of the following: grill, frying pan, or sheet pan

Note: If you are cooking your chicken in the oven, begin by preheating the oven to 425 degrees.


Step 1: Prepare your veggies:

All veggies can be placed in one large bowl, once prepared.

-Slice the cherry tomatoes in half.

-Cut the ends of the cucumber off and then slice it in half, lengthwise. Thinly sliced the halves of the cucumber into bite size pieces.

-Cut the ends off of the shallot and slice it length wise. Remove the outer layer, and slice the shallot as thin as possible.

-Chop the feta cheese into small pieces.

-Combine all of the veggies with the bell pepper, olives and chopped feta cheese. Set aside and wait to dress until you are ready to serve.



Step 2: Cooking the couscous:

Bring 3/4 cup of water and a pinch of salt to a boil in a small sauce pot. Once boiling, add the couscous, stir, cover and remove from the heat. Allow the couscous to steam in the pot until ready to serve.


Step 3: Cooking the chicken skewers: The skewers can be cooked in three different ways.


Baking directions

Preheat your oven to 425 degrees Fahrenheit (If you haven't already). Bake the chicken for 15-17 minutes, flipping half way through. Remove the chicken skewers from the oven and drizzle a tablespoon of the Greek dressing over the hot chicken. Dress the salad with the remaining Greek dressing. Serve immediately, while still hot, with the Tzatziki on the side for dipping.


Grilling directions

Turn your grill on high and allow the grates to heat up. Grill the chicken over the hottest part of the grill for 5 minutes on both sides. Remove the skewers from the grill and drizzle a tablespoon of Greek dressing over the hot chicken. Dress the salad with the remaining Greek dressing. Serve immediately, while still hot, with the Tzatziki on the side for dipping.


Stovetop directions

Heat a large pan/skillet over high heat. Sauté the chicken for 6 minutes on both sides. Remove the skewers from the pan and drizzle a tablespoon of Greek dressing over the hot chicken. Dress the salad with the remaining Greek dressing. Serve immediately, while still hot, with the Tzatziki on the side for dipping.
