BEEF KOFTE with brown butter couscous and cucumber salad

Time: 25 minutes

Ingredients not provided: Salt

Equipment required: Small pot, knife, cutting board, and grill or frying pan




Step 1: Prepare your veggies:

All veggies can be placed in one large bowl, once prepared.

-Slice the cherry tomatoes in half.

-Cut the ends of the cucumber off and then slice it in half, lengthwise. Thinly sliced the halves of the cucumber into bite size pieces.

-Cut the ends off of the red onion peel the outer layer off and chop into small pieces. Note: The red onion might be larger than required. Only use the desired amount of onion.

-Chop the apple into small pieces.

-Cut the lemon in half and remove the seeds.

Step 2: Cooking the couscous:

Bring 3/4 cup of water and a pinch of salt to a boil in a small sauce pot. Once boiling, add the couscous and the brown butter, stir, cover and remove from the heat. Allow the couscous to steam in the pot until ready to serve.

Step 3: Cooking the beef kofte:

Turn your grill or stove on high and allow the grates/pan to heat up. Grill the skewer for 5 minutes on both sides. Note: While the meat cooks finish, finish the salad.

Step 4: Finish the cucumber salad

In a bowl, combine the cucumber, tomatoes, apple, and red onion. Squeeze the lemon over the salad, drizzle with olive oil, and season to taste with salt and pepper.

When the kofte is done cooking, serve immediately, while still hot, with the Tzatziki on the side for dipping.
