Equipment required: Medium-sized pot, small-medium sized casserole dish, large cutting board OR sheet pan
Ingredients:
Directions:
Step 1: Preheat
Fill a medium-sized pot with water, add salt and bring to a boil.
Pre-heat the oven to 450 degrees.
Our theory on salting water - in order for your grains or pasta to be seasoned properly, the correct amount of salt should be added to the boiling water. In general, we suggest one tablespoon of salt for every two cups of water, but feel free to adjust for your own taste.
Step 2: Prep your pan
While your oven gets hot and water boils, open and pour the entire can of pizza sauce on the bottom of you casserole dish.
Step 3: Boil the pasta
Once boiling, cook the pasta sheets for 3 minutes, drain and allow to cool until you can handle the pasta. Ensure the pasta sheets do not stick together.
Step 4: Assemble the lasagna
Lay one pasta sheet flat on a large cutting board and spread all of the whipped ricotta evenly over the sheet, leaving one free inch at one end. Sprinkle salt and pepper over the whipped ricotta.
Step 5: Assemble the lasagna, continued
Place the other pasta sheet above the layer of whipped ricotta. Press the two pasta sheets together on the end where no ricotta was placed, in order to keep the pasta sheets from slipping
Step 6: Assemble the lasagna, continued
Spread all of the bolognese evenly over the top sheet of pasta.
Step 7: Assemble the lasagna, continued
Roll the two sheets of pasta into a log, as carefully as you can, as to avoid any of the contents spilling out.
Step 8: Assemble the lasagna, continued
Cut the lasagna log into 6 equal pieces and arrange spiral-side up above the sauce in the casserole dish. (Yes, we know the picture below only has four pieces, we did the trial and error for you...)
Step 9: Cooking the lasagna
Sprinkle the parmesan cheese over the top of the lasagna and bake in the 450 degree oven for 15-20 minutes or until golden brown. While the lasagna cooks, prep the salad.
Step 10: Prepare the lettuce
Trim just the very bottom of the lettuce off and discard. Cut and clean the remainder of the lettuce, dry, and place on a plate or in a bowl. Dress the lettuce with the lemon vinaigrette just before you serve it.
Step 11: Finish the lasagna
Remove the lasagna from the oven and immediately rip pieces of the Burrata cheese over the hot lasagna so that it melts into the spirals.
Eat hot and enjoy!
